Succulent green fish curry pairs perfectly with tangy mango and shallot salsa.
Ingredients:
  • 3 long green chillies, chopped
  • 1 onion, chopped
  • 4 garlic cloves, chopped
  • 76.25 gm fish sauce
  • Finely grated zest & juice of 1 lime
  • 32.00 gm brown sugar
  • 20.00 ml chopped ginger
  • 22.20 gm tomato paste
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 1/2 tsp ground turmeric
  • 400ml can light coconut milk
  • 4 pink ling fish fillets
  • 1 mango, peeled, diced
  • 82.50 ml coriander leaves
  • 40.00 ml fried shallots, plus extra to serve
  • Zest & juice of 1 lime
Instructions:
  • In a blender, combine chilli, onion, garlic, fish sauce, lime zest and juice, sugar, ginger, tomato paste, coriander, cumin, and turmeric to create a flavorful paste. Pour in coconut milk and blend until velvety. Transfer the mixture to a saucepan and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes until aromatic and slightly thickened.
  • Steam fish in a covered steamer over gently simmering water for 5-7 minutes, or until it turns opaque.
  • Combine the mango, coriander, shallots, lime zest, and lime juice in a bowl to create the salsa.
  • Spoon curry sauce into dishes, add fish, more sauce, and salsa on top. Serve with extra curry sauce and crispy fried shallots.
