Green curry fish parcels with coconut rice

Try these flavorful Asian fish parcels with jarred curry paste for a unique dinner option!
Ingredients:
  • 28.00 gm Thai green curry paste
  • 63.13 gm coconut cream
  • 4 (150g each) firm white fish fillets
  • 1 eschalot, thinly sliced
  • 1 long red chilli, thinly sliced diagonally
  • 1 small lime, cut into 8 slices
  • 2 x 250g packets Thai coconut &lemongrass rice
  • 100g snow peas, trimmed, thinly sliced
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and mix curry paste with coconut cream in a bowl.
  • Lay a piece of baking paper on a piece of foil. Add a fish fillet, curry mixture, eschalot, chilli, and lime slices. Fold and seal the foil to enclose the ingredients. Place on a baking tray and bake for 15 minutes until cooked through. Repeat with remaining ingredients.
  • While the rice is cooking according to the packet directions, transfer it to a heatproof bowl. Mix in the snow peas and gently combine. Serve the fish alongside the rice and garnish with fresh coriander leaves.
