Devilled mango chicken fried rice recipe

Savor the bold flavors of curry seasoned one pot fried rice with juicy chicken and veggies, ready in just 35 minutes. Enjoy the delightful mix of sweet mango bites adding a burst of flavor.
Ingredients:
  • 18.40 gm vegetable oil
  • 400g chicken thigh fillets, cut into 2cm pieces
  • 1 red capsicum, deseeded, coarsely chopped
  • 125g green beans, cut to 3cm pieces
  • 4 green shallots, thinly sliced
  • 2 large garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 2.50 gm curry powder
  • 450g (3 cups) cooked and cooled basmati rice (see note)
  • 21.00 gm soy sauce
  • 1 large mango, coarsely chopped
  • 40.00 ml chopped fresh coriander leaves
Instructions:
  • Heat a generous drizzle of oil in a hot wok or large frying pan. Sear the chicken in two separate batches, stirring occasionally, for about 5 minutes until golden and fully cooked. Once done, move to a plate and reserve for later.
  • Pour the rest of the oil into the wok. Sauté the capsicum, beans, and shallot for 3 minutes until they are tender-crisp. Introduce the garlic, ginger, and curry powder and stir for 30 seconds until fragrant. If the mixture sticks slightly, pour 1 tablespoon of water and scrape the base to release any cooked bits.
  • Combine rice and soy sauce in the wok, stirring constantly for 2-3 minutes until the rice is coated and heated through. Mix in the chicken, mango, and coriander until well combined.
