3 eggs
15.00 gm mayonnaise
1/2 red capsicum, cut into 6 small triangles

Instructions:

Place eggs in a saucepan and cover with cold water. Bring to a boil over high heat, stirring often to center the yolks. Reduce heat to simmer for 7 minutes, stirring occasionally. Drain and cool under cold running water. Peel the eggs, halve lengthways, and scoop the yolks into a small bowl. Mix in mayonnaise, then fill each egg half with the mixture. Garnish each egg half with a capsicum triangle in the center.
