One-pot Massaman beef curry recipe

Quick and easy creamy curry ready in just 30 minutes. Perfect winter comfort food served with fluffy rice.
Ingredients:
  • 18.20 gm olive oil
  • 600g No Added Hormones Beef Rump Steak
  • 1 red onion, cut into wedges
  • 100g curry paste
  • 600g butternut pumpkin, peeled, seeded, cut into 2cm pieces, or 500g pkt Coles Australian Diced Butternut Pumpkin
  • 1 large eggplant, cut into 3cm pieces
  • 400ml coconut milk
  • 300g green beans, trimmed, halved crossways
  • 450g pkt microwavable jasmine rice
  • 35g peanuts
Instructions:
  • In a large deep frying pan, heat half of the oil over high heat. Season the steak and cook for 2 minutes on each side for medium-rare or to your preferred doneness. Transfer the steak to a plate, cover with foil, and set aside to rest.
  • Heat the rest of the oil in the pan over high heat. Stir in the onions and cook for 2 minutes. Stir in the curry paste and cook for 1 minute until fragrant. Add the pumpkin, eggplant, and coconut milk. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes until the pumpkin is tender. Finally, add the beans and cook, covered, for 2 minutes until they are vibrant green and tender-crisp.
  • Cook the rice according to the package instructions while you prepare the rest of the dish.
  • Slice the steak thinly, then add it to the vegetable mixture in the pan and stir well to combine. Finish by sprinkling with peanuts and serving alongside the rice.
