One pot sweet-and-sour ground beef dish with veggies, served on messy hamburger buns.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup minced carrots (can sub chopped bell pepper)
  • 1 cup finely chopped onion (about 1 medium onion)
  • 1/2 cup finely chopped celery
  • 1/2 teaspoon salt
  • 1 1/4 pound ground beef
  • 1/2 cup ketchup
  • 2 cups tomato sauce (or 1 15-ounce can whole tomatoes, puréed)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 1 1/2 tablespoons brown sugar
  • Pinch ground cloves
  • 1/2 teaspoon dried thyme
  • Pinch cayenne pepper
  • 2 turns of freshly ground black pepper
  • 4 hamburger buns
Instructions:
  • In a large sauté pan over medium-high heat, warm olive oil. Sauté minced carrots for 5 minutes. Then add onions and celery, and continue cooking until onions are translucent, about 5 minutes. Stir in minced garlic and cook for 30 seconds. Transfer cooked vegetables to a medium-sized bowl and set aside.
  • Brown the ground beef: In the same pan, crumble the ground beef and sprinkle with salt. Let it cook until well-browned on one side, then flip and brown the other side. If needed, add a tablespoon of olive oil for extra lean beef. Optionally, cook meat alongside vegetables in a separate pan for efficiency. Remove beef with a slotted spoon if cooking in batches, and reserve with set-aside vegetables. Strain off excess fat, keeping 1 tablespoon in the pan.
  • In the same pan, reintroduce the cooked ground beef and vegetables. Break up any large chunks of beef with a wooden spoon. Add in ketchup, tomato sauce, Worcestershire sauce, vinegar, and brown sugar. Stir until combined. Incorporate ground cloves, thyme, and cayenne pepper. Reduce heat to medium low and simmer for 10 minutes. Adjust seasonings to your liking before serving.
