Rich and comforting ground beef casserole with creamy potatoes and melted Cheddar cheese - sure to please the whole family.
Ingredients:
  • 6 large potatoes, peeled
  • 1 cup vegetable oil for frying
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1.5 cups shredded mild Cheddar cheese
  • 1 pinch salt and ground black pepper to taste
  • 1 cup panko bread crumbs
  • 0.66666668653488 cup shredded Irish Cheddar cheese (such as Dubliner®)
  • 2 tablespoons unsalted butter, melted
  • 1 serving cooking spray
Instructions:
  • Preheat your oven to 350°F (175°C), then slice the potatoes into medium rounds.
  • In a deep skillet over medium heat, heat vegetable oil. Fry potato rounds until golden brown, around 5 minutes per batch. Transfer to a paper towel-lined plate to drain. Keep aside.
  • In a hot frying pan, sauté onion and garlic in olive oil until the onion is translucent, about 5 minutes. Add the ground beef and cook until browned and no longer pink, about 5 to 7 minutes. Drain excess grease from the pan.
  • In a large bowl, mix together the beef mixture and cream of chicken soup. Add mild Cheddar cheese and stir until well combined. Season with salt and pepper to taste.
  • Mix together the panko bread crumbs, Irish Cheddar cheese, and melted butter.
  • Prepare the baking dish by greasing it with cooking spray, then layer half of the potatoes at the bottom. Sprinkle a third of the Irish Cheddar cheese on top. Then, add half of the beef mixture. Repeat the layers with the remaining potatoes, Irish Cheddar, and beef mixture. Finish by topping everything with the panko mixture.
  • Bake in a hot oven until golden and bubbly, around 30 minutes.
