Best Bierock Recipe Ever

Flavorful ground beef and cabbage filling stuffed inside homemade bread machine dough for the ultimate bierocks.
Ingredients:
  • 1 small onion, chopped
  • 2.5 pounds ground chuck
  • 2 teaspoons monosodium glutamate (such as Ac'cent®)
  • 2 teaspoons red pepper flakes
  • 1 head cabbage, shredded
  • 3.25 cups bread flour
  • 1.25 cups milk, slightly warmed
  • 0.5 cup all-purpose flour
  • 1 egg, beaten
  • 2 tablespoons butter, softened
  • 1.25 teaspoons bread machine yeast
  • 0.75 teaspoon salt
Instructions:
  • Sauté onion in a nonstick skillet over medium heat until tender, about 5 minutes. Add ground chuck; cook until browned, about 8 minutes. Drain. Season with monosodium glutamate, red pepper flakes, salt, and pepper. Simmer on low heat, stirring occasionally, until flavors meld, about 5 minutes.
  • Boil lightly salted water and cook cabbage until just tender. Drain and let cool for 5 to 10 minutes before mixing into the ground chuck.
  • Add the bread flour, milk, all-purpose flour, egg, sugar, butter, bread machine yeast, and salt into the bread machine following the manufacturer's instructions. Select the "Dough" cycle and start.
  • Place dough on a floured surface. Divide into 2 equal portions. Roll each portion to 1/3-inch thickness. Cut each portion into 5 smaller pieces.
  • Spoon generous portions of the ground chuck-cabbage mixture onto the center of each dough piece. Carefully fold and seal the dough around the delicious filling. Enjoy the flavorful pockets!
  • Place the bierocks on greased baking sheets, then cover them with a clean dish towel and let them rise in a warm, dry spot for 1 hour.
  • Preheat oven to 350°F (175°C) for a perfectly baked dish.
  • Bake bierocks in the oven until they turn a beautiful golden brown, for about 12 to 15 minutes.
