Classic Russian beef stroganoff made with tender sirloin strips in a rich homemade beef and mushroom gravy.
Ingredients:
  • 1.5 tablespoons all-purpose flour
  • 0.75 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 1 pound beef sirloin, cut into 1/4-inch wide strips
  • 3 tablespoons butter
  • 1 cup thinly sliced mushrooms
  • 0.5 cup chopped onion
  • 1 clove garlic, minced, or more to taste
  • 3 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1.25 cups cold beef stock
  • 1 cup sour cream
  • 3 tablespoons cooking sherry
Instructions:
  • In a bowl, mix together 1 1/2 tablespoons of flour with a pinch of salt and pepper. Thoroughly coat the beef strips in the seasoned flour mixture.
  • In a skillet over medium heat, melt 3 tablespoons of butter. Add the beef strips dredged in flour; cook until nicely browned, approximately 5 minutes. Mix in mushrooms, onion, and garlic; sauté until the onion is just tender, about 3 to 4 minutes. Transfer the flavorful beef and mushroom mix to a plate.
  • In the same skillet, melt the remaining butter over low heat. Stir in 3 tablespoons of flour and tomato paste, cooking until slightly browned for 1 to 2 minutes. Increase heat to medium and gradually add beef stock, stirring constantly until the gravy thickens and becomes smooth, for about 5 to 10 minutes.
  • Add the combination of beef and mushrooms back to the skillet with the gravy. Mix in the sour cream and sherry, and cook until it starts to bubble, approximately 5 minutes.
