Best-ever Italian salad recipe

Flavorful Italian salad with lettuce, tomatoes, red onion, olives, and croutons. Make ahead by preparing croutons and dressing the day before. Just assemble with veggies when ready to eat. A convenient and impressive dish for any occasion.
Ingredients:
  • 1/2 day-old loaf pane di casa
  • Olive oil spray
  • 20g (1/4 cup) finely grated parmesan
  • 2 baby cos lettuce, leaves roughly torn
  • 200g red and yellow grape tomatoes, halved
  • 1 red capsicum, cut into thin strips
  • 1/2 small red onion, thinly sliced
  • 130g marinated mixed pitted olives
  • 36.40 gm extra virgin olive oil
  • 40.00 ml red wine vinegar
  • 2 garlic cloves, peeled, flattened
  • 1/2 tsp dried oregano
Instructions:
  • For the dressing, add all ingredients to a jar with a screw-top lid. Season to taste, seal the lid tightly, then shake vigorously to mix well. Let it sit to allow the flavors to meld together beautifully.
  • 1. Preheat your oven to 180C/160C fan-forced. Lightly grease a large baking tray. 2. Tear bread into 2-3cm pieces and place on the prepared tray. 3. Spray bread with oil and bake for 10 minutes. 4. Remove from oven, flip bread pieces, and push them together. 5. Sprinkle bread evenly with parmesan and bake for an additional 5-10 minutes until crisp and golden. 6. Allow it to cool before serving.
  • Combine the lettuce, tomato, capsicum, and onion in a big bowl. Drizzle with 1/4 cup of dressing (discard garlic). Mix well. Transfer to a large serving plate, and top with olives and croutons. Pour the remaining dressing over the top and serve right away.
