Best-ever minestrone

Quick and delicious minestrone soup, ready in a flash for cozy nights!
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 celery stick, finely chopped
  • 1 zucchini, finely chopped
  • 2 bacon rashers, finely chopped
  • 400g can diced tomatoes
  • 1l chicken stock
  • 22.20 gm tomato paste
  • 400g can borlotti beans, rinsed, drained
  • 65g shell pasta
  • 60g pkt Baby Spinach, finely shredded
  • 90g pesto
Instructions:
  • In a large saucepan, heat oil over medium heat. Add onion, carrot, celery, zucchini, garlic, and bacon. Cook and stir for about 5 minutes until the onion softens.
  • Stir in the tomato, stock, and tomato paste until well combined. Bring to a boil, then simmer on low for 10 minutes until the soup slightly thickens.
  • Combine the beans and pasta with the tomato mixture in the pan and simmer for 8 minutes or until pasta is al dente. Stir in the spinach until well mixed. Take the pan off the heat and season to taste.
  • Divide the soup amongst the serving bowls and garnish each with a dollop of pesto.
