Garlic and chilli prawn skewers

Grill prawns with aioli for a tasty weekend treat.
Ingredients:
  • 3 garlic cloves, finely chopped
  • 1 long red chilli, seeded and finely chopped
  • 36.40 gm olive oil
  • 10.60 gm lime juice
  • Salt and cracked black pepper
  • 750g raw king prawns, peeled, deveined, tails intact
  • Lime wedges, to serve
  • Ready-made aioli or mayonnaise, to serve
  • Salt flakes, to season
Instructions:
  • In a big non-metallic bowl, mix together the garlic, chili, oil, lime juice, salt, and pepper until thoroughly combined. Add the prawns and toss to ensure they are evenly coated. Cover and refrigerate for 15 minutes before proceeding.
  • Preheat the barbecue grill plate to high heat, then take the prawns out of the marinade and thread them onto metal or bamboo skewers.
  • Grill prawn skewers until cooked through and golden, about 2 minutes per side. Season with salt. Serve with lime wedges and optional aioli or mayonnaise.
