Easy spicy prawn skewers recipe

Get ready for summer with make-ahead BBQ skewers and sauce for easy entertaining.
Ingredients:
  • 1 long fresh green chilli, deseeded, chopped
  • 1 garlic clove, chopped
  • 165.00 ml fresh continental parsley leaves
  • 165.00 ml fresh coriander leaves and stalks
  • 5.00 gm ground cumin
  • 1/2 tsp ground cardamom
  • 80ml (1/3 cup) extra virgin olive oil
  • 36 peeled green prawns, tails intact
  • 2 large zucchini, thickly sliced
  • 2 red capsicums, deseeded, cut into 1.5 x 4cm strips
  • 1 small red onion, cut into small wedges
  • Chargrilled lemon wedges, to serve
Instructions:
  • Combine chili, garlic, parsley, coriander, cumin, and cardamom in a small food processor and pulse until coarsely chopped. Add 60ml (1/4 cup) oil and blend until mixed. Transfer the mixture to a bowl, season generously, cover, and let sit for 15 minutes to enhance the flavors.
  • Skewer the prawns, zucchini, capsicum, and onion onto 12 metal or presoaked bamboo skewers simultaneously.
  • Pour two-thirds of the sauce into a small serving bowl and reserve.
  • Preheat a barbecue grill or chargrill pan over medium-high heat. Combine the remaining 1 tablespoon of oil with the remaining sauce. Brush the mixture all over the skewers. Grill the skewers, turning and basting with sauce, until golden, about 8 minutes. Serve with extra sauce and chargrilled lemon wedges for a tangy finish.
