Ingredients:
  • 200g dried rice stick noodles
  • ½ pineapple, cored, cut into small pieces
  • 1 Lebanese cucumber, quartered lengthways, sliced
  • 1 carrot, halved lengthways, thinly sliced
  • 5 small radishes, cut into wedges
  • 82.50 ml coriander leaves
  • 40.00 ml chopped unsalted roasted peanuts
  • 60ml (1/4 cup) kecap manis
  • 48.80 gm fish sauce
  • 42.00 gm fresh lime juice
  • 20.00 ml tamarind paste
  • ½ tsp sambal oelek
Instructions:
  • In a large heatproof bowl, soak the noodles in boiling water for 10 minutes until softened. Drain, rinse under cold water, and then drain well before transferring to a large bowl.
  • Combine all dressing ingredients in a small bowl or jug and mix well.
  • Pour half of the dressing onto the noodles and mix well. Add the pineapple, vegetables, and coriander leaves. Drizzle more dressing to your liking, tasting as you go.
  • Transfer to a beautiful platter and generously sprinkle with chopped peanuts for a delightful presentation.
