Tropical salad with crispy tofu, inspired by Southeast Asia.
Ingredients:
  • ½ a cucumber
  • 1 large ripe mango
  • 1 bunch of radishes
  • ½ a ripe pineapple
  • 125 g beansprouts
  • 125 g baby spinach
  • 350 g firm tofu
  • 1 fresh red chilli
  • 100 g unsalted peanuts
  • groundnut oil
  • 2 limes
  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon runny honey
  • 1 teaspoon sambal oelek
  • 1 tesapoon tamarind
  • 1 teaspoon light brown sugar
Instructions:
  • Prepare the dressing by combining lime zest, lime juice, and the remaining dressing ingredients. Season with sea salt and black pepper to taste. Slice the mango cheeks into lengths after removing the skin. Finely slice the radishes, deseed and cube the cucumber, and peel and cube the pineapple into 1cm pieces. Add these to a bowl along with beansprouts and spinach. Cut tofu into 2cm cubes and finely slice the chili. Toast peanuts in a dry pan and set aside. Fry the tofu in a little oil until golden. Drain on paper towels, then add it to the bowl of fruit. Drizzle the dressing over the salad and top with toasted peanuts and sliced chili. Enjoy your delicious creation!
