Whip up this quick prawn and pasta dish in under 30 minutes!
Ingredients:
  • 1kg prawn
  • 375g linguine
  • 36.40 gm extra virgin olive oil
  • 1 small red onion, halved, thinly sliced
  • 1/2 tsp dried chilli flakes
  • 400g can Italian cherry tomatoes in tomato juice
  • 127.50 gm salt reduced chicken style liquid stock
  • 5.00 gm caster sugar
  • 62.50 ml shredded fresh basil leaves
  • Fresh basil leaves, to serve
Instructions:
  • Peel and devein prawns, keeping tails on.
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain well.
  • Heat oil in a large, deep frying pan over medium heat. Sauté onion until softened, about 3-4 minutes. Add garlic and chilli; cook until fragrant, about 1 minute. Stir in tomatoes, stock, and sugar; bring to a simmer and cook for 5 minutes. Add prawns and simmer for another 5 minutes until prawns are cooked and sauce thickens slightly. Finish by stirring in fresh basil.
  • Combine the pasta with the flavorful tomato mixture, season with salt and pepper, toss everything together, and serve with a sprinkle of fresh basil leaves.
