Stuffed Chicken Breasts with Bacon and Cream Cheese

Creamy cheese, zesty cilantro, and crispy bacon elevate cheesy chicken breasts.
Ingredients:
  • 1 pound bacon
  • 6 (5 ounce) skinless, boneless chicken breast halves
  • 1 (8 ounce) package cream cheese, softened
  • 0.75 cup shredded Cheddar cheese, divided
  • 0.25 cup chopped green onions, or to taste
  • 0.25 cup chopped fresh cilantro, or to taste
  • 1 tablespoon minced garlic
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet and a baking pan with foil.
  • Arrange bacon strips in a single layer on the baking sheet.
  • Bake bacon in the preheated oven until beautifully browned and crispy, approximately 15 minutes. Then, drain the bacon on paper towels and chop it up while keeping the oven on.
  • Butterfly the chicken breasts by slicing them horizontally, being careful not to cut all the way through.
  • In a bowl, mix cream cheese, 1/4 cup of Cheddar cheese, green onions, cilantro, and garlic. Stir in chopped bacon until combined.
  • Butterfly the chicken breasts and spread a layer of creamy cheese mixture inside each one. Close them up and place in the baking pan.
  • Bake in the preheated oven for 30 minutes. Sprinkle with remaining Cheddar and bake for an additional 10 minutes until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Allow the dish to cool for a bit before enjoying.
