Indulge in a classic French onion twist on stuffed chicken with bacon, mushrooms, and cheese all smothered in creamy goodness for a fuss-free meal.
Ingredients:
  • 100g button mushrooms, sliced
  • 3 short cut bacon rashers, finely chopped
  • 40g packet French onion soup mix
  • 60g baby spinach
  • 100g (1 cup) coarsely grated mozzarella
  • 2 (about 200g each) chicken breast fillets
  • 50g butter, chopped
  • 1 brown onion, halved, thinly sliced
  • 300ml carton cooking cream
  • 15g (1/4 cup) panko breadcrumbs
  • 62.50 ml chopped fresh continental parsley leaves
Instructions:
  • In a large ovenproof frying pan, heat oil over medium-high heat. Cook mushrooms and bacon for 4 minutes until golden, stirring occasionally. Sprinkle 2 tsp of soup mix, then add spinach and stir until just wilted. Let it cool for 10 minutes, then stir in 40g (1/3 cup) of mozzarella until combined. Enjoy!
  • Preheat your oven to 200C/180C fan forced. Halve the chicken breasts horizontally and place each fillet between two sheets of baking paper. Gently pound the thickest part of the chicken with a mallet or rolling pin until the fillets are of even thickness.
  • Roll each chicken piece around the flavorful mushroom mixture to create a delicious filling inside.
  • In a pan over medium heat, melt butter. Add onion and garlic, and cook for about 5 minutes until softened. Stir in the rest of the soup mix, cream, and 125ml (1/2 cup) water, and bring to a simmer. Finally, add the chicken to the pan and bake for 10 minutes until nearly cooked through.
  • Top the chicken with the remaining cheese and breadcrumbs, then bake for an additional 10 minutes or until the chicken is fully cooked and the cheese is golden. Garnish with fresh parsley before serving.
