Bacon-wrapped chicken breasts stuffed with creamy onion cheese filling.
Ingredients:
  • 8 slices bacon
  • 6 ounces cream cheese, softened
  • 4 green onions, chopped
  • 0.25 cup chopped red bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a small baking dish.
  • In a large, deep skillet, sizzle the bacon over medium-high heat until most of the grease renders out, keeping the bacon very soft, for approximately 3 minutes. Remove the bacon and gently blot dry with paper towels.
  • Mix cream cheese, green onions, bell pepper, garlic powder, salt, and pepper until well combined. Spread this mixture onto each chicken breast. Fold the breasts in half, wrap with bacon slices, and secure with toothpicks if necessary. Transfer to the baking dish.
  • Roast in the preheated oven until the chicken is cooked through, for about 30-35 minutes. Remember to remove the toothpicks before serving.
