Make juicy chicken breasts stuffed with gooey mozzarella, garlic, and wrapped in crispy bacon.
Ingredients:
  • 2 chicken breast fillets
  • 1 (4 ounce) ball water-packed fresh mozzarella cheese, drained and sliced
  • 2 cloves garlic, cut in half, divided
  • 4 slices bacon
  • 1 red onion, cut into wedges
  • 1 tablespoon olive oil, or as needed
  • 1 teaspoon chopped fresh rosemary
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Create a pocket in each chicken breast by making a slit down one side without cutting all the way through. Fill each pocket with mozzarella cheese and 1/4 of the minced garlic. Wrap each stuffed breast with 2 slices of bacon and secure with toothpicks to ensure the pocket is fully covered.
  • In a shallow baking dish, mix together the onion and the rest of the garlic. Drizzle with olive oil. Place the stuffed chicken breasts on top and sprinkle with rosemary.
  • Roast in the oven until chicken is fully cooked and internal temperature reaches 165°F (74°C), about 30 minutes.
