Jalapeno popper stuffed chicken wrapped in crispy bacon - a spicy and delicious meal!
Ingredients:
  • 4 ounces cream cheese, softened
  • 1 cup shredded sharp Cheddar cheese
  • 2 fresh jalapeno peppers, seeded and minced
  • 0.5 teaspoon garlic powder
  • 1 tablespoon barbecue seasoning
  • 2 (8 ounce) boneless, skinless chicken breasts
  • 6 strips thinly sliced bacon
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C).
  • In a bowl, blend cream cheese, Cheddar cheese, jalapenos, garlic powder, and barbecue seasoning thoroughly until fully mixed.
  • Make a deep pocket in each chicken breast, ensuring not to slice through. Stuff each pocket with cream cheese mixture and wrap each chicken breast with 3 slices of bacon.
  • Place a baking rack on a baking sheet and arrange the stuffed chicken on top of the rack.
  • Roast the chicken in the preheated oven for about 40 minutes until fully cooked and the internal temperature reaches 165°F (74°C). Rest for 5 minutes before serving.
