Bacon-wrapped chicken breasts stuffed with Gorgonzola, shallots, and garlic for a deliciously savory meal for two.
Ingredients:
  • cooking spray
  • 2 skinless, boneless chicken breast halves
  • 0.25 cup crumbled Gorgonzola cheese
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons minced shallot
  • 1 clove garlic, minced
  • 4 thick slices of applewood smoked bacon
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C) and generously coat an 8x8-inch baking dish with cooking spray.
  • With precision, create a 2-inch long and 1 1/2 inch deep slit in the thick side of each chicken breast using a sharp knife.
  • Combine Gorgonzola cheese, parsley, shallot, and garlic in a bowl. Season with salt and black pepper. Stuff each chicken breast with the mixture. Wrap each breast with 2 slices of bacon and secure with toothpicks. Transfer to a baking dish.
  • Place the dish in the oven, where the delicious aroma of sizzling bacon and tender chicken will fill your home. Cook until the bacon is beautifully browned and the chicken is cooked through, about 35 minutes.
