Blue cheese stuffed mini potatoes - irresistible bite-sized appetizer.
Ingredients:
  • 20 small new potatoes
  • 0.25 cup vegetable oil
  • coarse sea salt to taste
  • 0.5 cup sour cream
  • 0.25 cup crumbled Gorgonzola cheese
  • 2 tablespoons chopped fresh chives
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Arrange potatoes on a baking sheet, evenly drizzle with oil, and toss to coat. Season generously with salt. Bake in a preheated oven until fork-tender, about 45 to 50 minutes.
  • Using a small knife, gently cut a cross on the top of each potato and press down on the sides to open them up. Mix sour cream and Gorgonzola in a small bowl. Spoon a generous amount of the cheese mixture onto each potato and sprinkle with chives. Serve while still warm or at room temperature.
