Honey and spice coated chicken drumsticks.
Ingredients:
  • 8 chicken drumsticks
  • 1 orange, zested and juiced
  • 90g honey
  • 40.00 ml rosemary, finely chopped
  • 1 garlic clove, crushed
  • 11.80 gm Dijon mustard
  • 400g made easy kale coleslaw salad kit
  • Lemon wedges, to serve
Instructions:
  • Slash each chicken drumstick twice on the skin. Place in a large glass or ceramic dish. In a small jug, whisk together oil, orange juice, orange zest, honey, rosemary, garlic, and mustard. Season with salt and pepper. Pour the mixture over the chicken, making sure each piece is coated. Refrigerate for 1 hour to marinate.
  • Preheat oven to 200°C and line a baking tray with baking paper. Drain chicken, saving the marinade. Simmer the reserved marinade in a small saucepan over medium-low heat for 10 minutes until it thickens into a delicious sauce. Keep warm.
  • Lay out the chicken on the prepared baking tray. Roast in the oven, periodically rotating and brushing on the sauce every 10 minutes, until beautifully golden brown and fully cooked, about 30-35 minutes.
  • Follow instructions on the coleslaw salad kit packet. Arrange the salad on a platter, top with chicken, and serve with lemon wedges.
