Sticky orange and mustard chicken

Roasted and grilled chicken for irresistibly juicy and flavorful results.
Ingredients:
  • 1.6kg chicken
  • 500ml (2 cups) hot water
  • Lemon wedges, to serve
  • 185ml (3/4 cup) orange juice
  • 170g (1/2 cup) orange marmalade
  • 32.00 gm brown sugar
  • 46.80 gm wholegrain mustard
  • 40.00 ml rosemary sprigs
  • 20.00 ml lemon thyme sprigs
Instructions:
  • Preheat your oven to 180C. In a saucepan over low heat, combine orange juice, marmalade, sugar, mustard, rosemary, thyme, and garlic. Stir and cook for 2 minutes until the marmalade dissolves. Increase the heat to high, bring to a simmer, and let it cook for 10 minutes until the glaze thickens. Remove from heat.
  • In a large frying pan, heat oil over high heat. Add chicken pieces and sear for 2-3 minutes per side until nicely browned.
  • In a roasting pan, mix water and 2 tablespoons of glaze. Add chicken, skin-side down, ensuring it is well coated. Cover with foil and bake at 375°F, turning once, for 45 minutes or until chicken is fully cooked.
  • Preheat a barbecue grill or chargrill to medium heat. Brush chicken with the remaining glaze and cook for 5 minutes, turning occasionally, until caramelized and golden brown. Transfer to a serving plate and accompany with baby rocket leaves and lemon wedges.
