Elevate your Christmas ham with a delicious sticky orange and golden syrup glaze.
Ingredients:
  • 83.75 gm golden syrup
  • 135.00 gm dark brown sugar
  • 131.25 gm orange juice
  • 2 garlic cloves, sliced
  • 6cm piece fresh ginger, sliced
  • 8kg cooked leg ham
  • 12 small oranges, peeled, thinly sliced
  • Wholegrain mustard, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • In a small saucepan over medium-high heat, combine syrup, sugar, orange juice, garlic, and ginger. Cook and stir for 5 minutes or until sugar dissolves. Bring to a boil, then reduce heat to medium and simmer for another 5 minutes until slightly thickened. Remove from heat and transfer to a heatproof bowl.
  • With a small sharp knife, slice along the ham's rind about 8cm from the shank. Starting from the opposite end of the shank, gently separate and remove the rind from the fat using your thumb. Peel back and discard the rind, then wrap the shank end in foil.
  • Prepare the ham by placing it on a greased wire rack in a roasting pan. Brush with a little glaze. Arrange overlapping orange slices on top and brush with more glaze. Bake for 1 hour and 30 minutes, basting every 15 minutes until golden and caramelized. Remove foil from shank and serve with mustard.
