Orange and date couscous

Enhance your barbecue with this zesty, fruity side dish to tantalize your taste buds!
Ingredients:
  • 1 large orange
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 125.00 ml pitted dried dates, halved
  • 1 small carrot, peeled, grated
  • 250.00 ml fresh mint leaves, finely chopped
  • 62.50 ml pine nuts, toasted
  • 18.20 gm olive oil
  • 1.25 gm ground cumin
  • 5.00 gm caster sugar
Instructions:
  • In a heatproof bowl, combine couscous and boiling water. Cover and let sit for 5 minutes, or until liquid is absorbed. Fluff the grains with a fork to separate them.
  • Peel and separate the orange, squeezing the membrane over a bowl to collect 1/4 cup of juice. Remove the membrane. Combine couscous, orange segments, dates, carrot, mint, and pine nuts in a bowl.
  • In a screw-top jar, combine oil, cumin, sugar, and reserved orange juice. Season with salt and pepper, secure the lid, and shake well. Pour the dressing over the couscous mixture, toss to combine, and serve.
