Delicious lightly sweet orange muffins made with thin skinned oranges.
Ingredients:
  • 1 thin skinned orange, cut into eighths and seeded
  • 0.5 cup buttermilk
  • 0.5 cup chopped pitted dates
  • 0.5 cup butter
  • 1.75 cups all-purpose flour
  • 0.75 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare your muffin tin by greasing the cups or lining them with paper liners.
  • Combine the orange pieces, egg, buttermilk, dates, and butter in a blender. Blend until thick and fairly smooth with some flecks. Transfer the mixture to a large mixing bowl.
  • Combine flour, sugar, baking soda, baking powder, salt, cloves, and ginger in a separate bowl. Gently fold the flour mixture into the orange mixture until just combined. It's okay if there are lumps. Fill muffin tins with batter just under the rims.
  • Place the muffins in a preheated oven and bake for 20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to rest in the pan for five minutes before transferring them to wire racks to cool.
