Date-nut filled pinwheel cookies: a delightful and tasty treat.
Ingredients:
  • 1 cup water
  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 4 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 teaspoon baking soda
  • 2.5 cups dates, pitted and chopped
  • 0.5 cup white sugar
  • 1 cup chopped walnuts
Instructions:
  • In a mixer, combine shortening, 1 cup white sugar, and brown sugar until smooth. Mix in eggs, vanilla, flour, salt, and baking soda until well combined. Set the dough aside.
  • To prepare the filling, simply combine dates, sugar, water, and nuts in a saucepan. Cook over medium heat until thickened. Once done, allow the filling to cool. If needed, adjust the consistency by adding water until it can be easily spread on the dough.
  • Divide the dough into 4 parts, then roll out each piece on a floured surface to a thickness of 1/2 inch. Spread with the filling that has cooled, but not cold. Roll up each piece jelly-roll style, ensuring the ends are sealed, and place them on cookie sheets. Refrigerate until chilled.
  • Cut the cold rolls into pieces and bake them in a preheated 400°F (205°C) oven for 10 minutes.
