Chocolate-coconut Pinwheels

Decadent chocolate coconut pinwheel cookies - flavor as stunning as their appearance.
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.25 teaspoon salt
  • 1.5 teaspoons baking powder
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.33333334326744 cup shortening
  • 0.33333334326744 cup butter
  • 1 egg
  • 1 tablespoon milk
  • 2 teaspoons vanilla extract
  • 3 ounces cream cheese
  • 0.25 cup finely chopped walnuts
Instructions:
  • In a large mixing bowl, cream together shortening, butter, and 3/4 cup sugar until light and fluffy. Stir in milk, egg, and 1 tsp vanilla until well combined.
  • Combine flour, cocoa, baking powder, and salt in a separate bowl. Mix into the butter mixture until well combined.
  • Split the dough in half and refrigerate for 2-3 hours, or until it is easy to work with.
  • Preheat the oven to 350°F and grease the cookie sheets.
  • Combine smooth cream cheese with 1/3 cup of sugar and 1 tsp of vanilla until well mixed. Gently fold in the coconut.
  • Roll out each half of the dough to form 10-inch squares. Cut each square into sixteen 2 1/2-inch squares. Arrange squares 1/2 inch apart on a baking sheet. Make 1-inch slits from each corner towards the center of each square. Place a level teaspoon of the coconut mixture in the center of each square.
  • Evenly distribute chopped nuts in the center and firmly press to seal. Bake for 8-10 minutes or until edges are firm and cookies are slightly puffed. Allow to cool on the baking sheet for 1 minute, then transfer to a cooling rack to cool completely.
