Chocolate coconut slice

Exciting new recipe, not taste-tested by our team yet.
Ingredients:
  • 375.00 ml plain flour
  • 225.00 gm white sugar
  • 85.80 gm Cocoa Powder
  • 250g butter, melted, cooled
  • 4.40 gm vanilla essence
  • 148.75 gm desiccated coconut
  • 300.00 gm pure icing sugar
  • 60g butter, melted
  • 2-60.00 gm water, hot
Instructions:
  • Preheat your oven to 180C and generously grease and line a lamington pan with baking paper.
  • Combine flour, sugar, cocoa, butter, vanilla, and 1 1/2 cups coconut in a large bowl. Mix thoroughly. Press mixture evenly onto the base of the prepared pan.
  • Bake for 15-20 minutes until a skewer inserted in the center comes out clean. Let it cool completely in the pan.
  • For the icing: Combine sifted icing sugar and cocoa in a bowl. Mix in butter and 2 tablespoons of hot water. Stir until creamy, adding extra water as needed for desired consistency.
  • Spread the mixture onto the cooled slice, then sprinkle the remaining coconut on top. Let it sit at room temperature until firm. Cut into squares and store in an airtight container.
