Weet-Bix coconut slice

Turn classic breakfast dish into decadent chocolate coconut slice.
Ingredients:
  • 5 Weet-Bix, crushed
  • 150g (1 cup) self-raising flour
  • 45g (1/2 cup) desiccated coconut
  • 100g (1/2 cup, firmly packed) brown sugar
  • 125g butter, melted
  • 100g (1/3 cup) Nutella
  • 1 egg, lightly whisked
  • 100g white chocolate melts, melted
  • 30g brown M&M's Minis
Instructions:
  • Preheat your oven to 180C/160C fan forced. Lightly grease a 16 x 26cm slice pan with oil and line it with baking paper, leaving some overhang for easy removal later.
  • In a large bowl, mix together Weet-Bix, flour, coconut, and sugar. In a separate bowl, blend butter and Nutella. Combine the butter mixture and egg into the Weet-Bix mixture until fully incorporated. Press the mixture into the prepared pan.
  • Bake for 15 minutes until slice is perfectly firm and golden brown. Allow it to cool completely in the pan.
  • Drizzle the melted chocolate over the top and sprinkle with M&M's. Trim the edges with a large serrated knife and cut into 18 pieces.
