Elevate Weet-Bix into a delicious chocolate-coconut slice, ideal for bake sales, parties, or afternoon treats.
Ingredients:
  • 3 Weet-Bix biscuits
  • 85g desiccated coconut
  • 120g caster sugar
  • 150g self-raising flour
  • 20.00 gm cocoa powder
  • 150g salted butter
  • 4.40 gm vanilla essence
  • 375.00 ml Soft Icing Mixture
  • Extra 10.00 gm cocoa powder
  • 40.00 gm hot water
Instructions:
  • Preheat your oven to 180°C. Grease a 16x26cm baking pan and line it with baking paper. Break up the biscuits and combine them with coconut and sugar in a mixing bowl. Add flour and cocoa powder, and mix well.
  • Gently warm butter in a small saucepan. Drizzle the melted butter over the dry ingredients, add vanilla, and thoroughly combine.
  • Transfer the mixture into the prepared pan and firmly press it down to create an even layer. Bake in the oven for about 15 minutes or until fully cooked.
  • Sift icing sugar and cocoa powder into a bowl, add water, and stir until smooth. Spread the warm icing over the slice and refrigerate until set. Cut into squares before serving.
