Decadent coconut chocolate cookies inspired by Bounty bars!
Ingredients:
  • 125g salted butter, softened
  • 90.00 gm brown sugar
  • 53.75 gm caster sugar
  • 100.00 gm traditional rolled oats
  • 75.00 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 1 quantity cookie dough base
  • 41.25 gm coconut flakes, roughly chopped
  • 40.00 ml dark chocolate chips
Instructions:
  • Cream together the butter and sugars using an electric mixer until light and creamy. Mix in the egg until well combined. Then, blend in the oats and flours with a wooden spoon until evenly mixed.
  • Preheat the oven to 190°C/170°C fan-forced. Line 2 baking trays with baking paper, then mix in ½ cup of coconut into the dough until well combined.
  • Shape 2 level tablespoons of mixture into 16 balls, then place onto trays with enough space for spreading. Flatten each ball to form a 5.5cm round using the palm of your hand. Sprinkle chocolate chips and remaining coconut on top. Bake for 15 minutes, switching trays halfway through, until light golden. Let cookies rest on trays for 5 minutes before transferring to a wire rack to cool. Serve and enjoy your delicious cookies!
