Healthy twist on choc chip cookies with oats, coconut, and dark chocolate for guilt-free indulgence!
Ingredients:
  • 30.00 ml chia seeds
  • 150g plain flour
  • 90g rolled oats
  • 40g desiccated coconut
  • 110g panela sugar
  • 50g pepitas
  • 100g butter, melted, cooled
  • 50g dark chocolate, chopped
  • Melted dark chocolate, extra, to serve
Instructions:
  • Preheat oven to 180°C and line 2 large baking trays with baking paper. In a small bowl, whisk chia seeds with ⅓ cup (80ml) of water until combined. Let it sit for 15 minutes, stirring occasionally until it thickens.
  • In a large bowl, mix flour, oats, coconut, sugar, and pepitas. Create a well in the center. Add butter and chia mixture, using your fingertips to combine. Gently fold in the chocolate.
  • Roll 2 teaspoons of the oat mixture into balls, then gently flatten them on the lined trays. Bake for 10 minutes, or until the cookies are a light golden color. Let them cool completely on a wire rack before drizzling with melted chocolate.
