Time-tested crunchy oat biscuits.
Ingredients:
  • 250g butter, softened
  • 180.00 gm brown sugar
  • 107.50 gm caster sugar
  • 1 egg, at room temperature
  • 8.80 gm vanilla essence
  • 300.00 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 250.00 ml choc chips
  • 200.00 gm rolled oats
  • 220g jar Nutella
  • 42 chocolate freckle lollies
Instructions:
  • Preheat your oven to a toasty 190°C and get your baking trays dressed up with a cozy layer of baking paper.
  • With an electric mixer, whip together butter, brown sugar, and caster sugar until light and fluffy. Mix in egg and vanilla essence until well combined.
  • Gently sprinkle flour and fragrant cinnamon over the creamy butter mixture. Toss in the decadent chocolate chips and wholesome oats. Mix everything together using a trusty wooden spoon until well combined.
  • Take heaping spoonfuls of the mixture and shape them into balls. Arrange them on baking trays with enough space between each one. Bake in the oven for 12 to 15 minutes, switching the trays halfway through, until they turn a light golden color.
  • Allow the cookies to cool and set on the trays for 5 minutes, then delicately move them to a wire rack to finish cooling.
  • Before serving, generously smear each cookie with a luscious teaspoon of Nutella and crown it with a delightful chocolate freckle.
