Ingredients:
  • 170g butter
  • 57.20 gm honey
  • 150.00 gm wholemeal self-raising flour
  • 1.25 gm bicarbonate of soda
  • 100.00 gm rolled oats
  • 118.80 gm brown sugar
  • 125.00 ml raisins
  • 95.00 gm chocolate bits
  • 42.50 gm desiccated coconut
Instructions:
  • Preheat the oven to 180°C. Line 2 large baking trays with baking paper. In a small saucepan over medium-low heat, melt the butter and honey together, stirring for 2 to 3 minutes. Once melted, remove from heat and let it cool.
  • Sift flour and bicarbonate of soda into a large bowl, then add in the husks from the sieve. Stir in oats, sugar, raisins, chocolate bits, and coconut. Pour in the cooled butter mixture and mix until fully combined.
  • Shape tablespoons of the mixture into balls and place them on the prepared trays, leaving space for spreading. Gently press them down with your fingertips. Bake for 15 to 18 minutes, switching trays halfway through, until the biscuits are golden brown. Let them cool on the trays before serving.
