Chewy oat and raisin cookies - a lunchbox favorite!
Ingredients:
  • 250.00 ml raisins
  • 250.00 ml cornflakes
  • 75.00 gm rolled oats
  • 75.00 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 45.00 gm brown sugar
  • 56.88 gm olive oil
  • 1 egg
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and prepare a baking tray lined with baking paper.
  • Mix together the raisins, cornflakes, oats, flours, and sugar in a bowl. In a separate jug, whisk together the oil, egg, and 1/4 cup of cold water. Pour this mixture into the bowl with the raisins and stir until well combined.
  • Roll 2 tablespoons of mixture into balls using floured hands. Place them 3cm apart on a prepared tray, then slightly flatten. Bake for 12 to 14 minutes until golden. Let cool on the tray before serving.
