Festive oat bars with raisins, coconut, and cherries atop a chewy crust. A cherished holiday treat passed down through generations.
Ingredients:
  • 0.5 cup butter
  • 0.5 cup all-purpose flour
  • 2 eggs
  • 1 cup brown sugar
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 0.75 cup raisins
  • 0.5 cup flaked coconut
  • 0.5 cup pitted sour cherries, drained with liquid reserved
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Combine 1/2 cup of brown sugar, butter, 1/2 cup of flour, and oats in a bowl until crumbly. Press mixture into a 9-inch square pan and bake in a preheated oven for 15 minutes.
  • Combine eggs, 1 cup brown sugar, 1/2 cup flour, salt, baking powder, and vanilla in a bowl until thoroughly mixed. Gently fold in raisins, coconut, and cherries, adding a splash of cherry juice for desired consistency. Spread mixture over the baked crust in the pan.
  • Place in the preheated oven and bake for 30 minutes, or until golden brown and set. Allow it to cool before slicing it into bars.
