Raisin-studded Boston brown bread steamed in a coffee can - a classic favorite!
Ingredients:
  • Butter for greasing loaf pans or coffee cans
  • 1/2 cup (heaping) all-purpose flour
  • 1/2 cup (heaping) rye flour
  • 1/2 cup (heaping) finely ground corn meal (must be finely ground)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 cup raisins (optional)
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup molasses (any kind)
Instructions:
  • For steaming on the stovetop, place a steamer rack in a tall stockpot and add water until it reaches 1/3 up the sides of the coffee can. Heat on medium. If baking in the oven, preheat to 325°F and boil a large pot of water.
  • Prepare the pan: Coat a coffee can or small loaf pan with butter.
  • Combine all-purpose flour, rye flour, cornmeal, baking powder, baking soda, salt, and allspice in a large bowl. Optionally, incorporate raisins.
  • In a separate bowl, blend the buttermilk and vanilla extract (if using), then whisk in the molasses. Combine the wet ingredients with the dry and stir thoroughly until well mixed.
  • Pour the batter into a coffee can or loaf pan, making sure not to fill it more than 2/3 up the sides. Cover tightly with foil.
  • Create a steamy environment: For stovetop method, place the can in a pot on a steamer rack, ensuring water reaches 1/3 way up the sides of the can. Cover pot and simmer. For oven method, place can in a high-sided roasting pan, fill with boiling water 1/3 way up the can, then bake at 325°F.
  • Steam the bread for a minimum of 2 hours and 15 minutes on the stovetop or in the oven. Ensure the water level in the pot remains adequate and replenish if necessary with hot water. Verify doneness by inserting a toothpick into the bread; if it comes out clean, it's ready. If not, continue cooking covered for up to an additional 45 minutes.
  • Let the bread cool for 10 minutes after removing from the stovetop or oven. Then, let it cool for 1 hour more before turning out of the container. Enjoy sliced plain or toasted in butter in a frying pan.
