Slow-baked navy beans with sweet onions, brown sugar, and spices make a perfect Boston-style vegetarian baked bean dish.
Ingredients:
  • 1 (16 ounce) package dried navy beans
  • water as needed
  • 2 cups chopped sweet onion
  • 0.25 cup firmly packed brown sugar
  • 0.25 cup molasses
  • 2 tablespoons cider vinegar
  • 2 teaspoons dry mustard
  • 1 clove garlic, minced
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground black pepper
Instructions:
  • Place navy beans in a large container and cover with cool water, allowing them to soak for 8 hours or overnight.
  • Rinse navy beans and place them in a pot with 5 cups of water.
  • Bring the water to a boil, then simmer until the beans are tender, approximately 1 hour.
  • Preheat the oven to 250°F (120°C).
  • Mix together beans, onion, brown sugar, molasses, vinegar, mustard, garlic, nutmeg, and cinnamon in a 2-quart casserole dish. Season with pepper and cover with the lid.
  • Cook in the preheated oven for 5 to 7 hours, giving it a stir midway and adding water if needed. Uncover and continue baking until it reaches your preferred thickness, around 1 more hour.
