Vegetarian baked beans with canned navy beans: rich, smoky, meaty flavor without meat.
Ingredients:
  • 1 medium onion, chopped
  • 1 jalapeno pepper, seeded and diced
  • 1 tablespoon minced garlic
  • 0.25 cup bourbon
  • 0.33333334326744 cup tomato paste
  • 0.25 cup maple syrup
  • 2 tablespoons molasses
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons yellow mustard
  • 1 teaspoon smoked paprika
  • 2 (15 ounce) cans navy beans, rinsed and drained
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat oil over medium-high heat. Sauté onion and jalapeno until onion is soft and translucent, about 5 minutes. Stir in garlic and cook for 1 more minute. Pour in bourbon and simmer for 4 minutes. Turn off the heat.
  • In a large bowl, mix together tomato paste, maple syrup, molasses, vinegar, soy sauce, mustard, and paprika until smooth. Stir in the onion mixture and beans until combined.
  • Pour the mixture into a baking dish. Bake covered for 35 minutes, then uncover and bake for an additional 15 minutes. Let it rest for 5 minutes before serving.
