Transform baked beans into zesty nachos with a smoky, tangy sauce. Drain beans for refried bean texture and save tomato liquid for a flavorful drizzle.
Ingredients:
  • 425g can baked beans in tomato sauce
  • 7.50 gm smoked paprika
  • 2 grape tomatoes, thinly sliced
  • 1 tsp sriracha chilli sauce
  • 2.65 gm fresh lime juice
  • 120g corn chips
  • 1 green shallot (spring onion), thinly sliced
  • 1 fresh green jalapeño chilli, thinly sliced
  • 155g (1 1/2 cups) pre-grated 3 cheese blend
Instructions:
  • Drain the baked beans in a sieve over a microwave-safe bowl for 10 minutes, saving the bean liquid. Transfer the beans to a clean bowl and mix in the smoked paprika until fully incorporated.
  • Combine the tomato, sriracha, and lime juice with the reserved bean liquid, then microwave until warmed through, about 30 seconds.
  • Cover the microwave plate with baking paper. Place the corn chips on top. Sprinkle with beans, shallot, jalapeño, and cheese. Microwave for 3-4 minutes until the cheese is melted.
  • Serve the nachos with a generous drizzle of the baked bean sauce.
