Boston Brown Bread with Dried Fruit

Homemade brown bread with a delightful nutty kick from dried fruits.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup Gold Medal™ whole wheat flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking soda
  • 1/2 cup molasses
  • 1 egg or 1/4 cup fat-free egg product
  • 2 tablespoons butter or margarine, softened
  • 1 cup fat-free buttermilk
  • 3/4 cup diced dried fruit and raisin mixture
  • 2 tablespoons butter or margarine, melted
Instructions:
  • Preheat the oven to 350°F. Grease the bottom of an 8x4-inch loaf pan with shortening or cooking spray and coat it with flour.
  • Combine flours, cornmeal, and baking soda in one bowl. In a separate bowl, use an electric mixer to blend molasses, egg, and 2 tablespoons of softened butter for about 3 minutes. Gradually mix in the flour mixture and buttermilk until well combined. Fold in dried fruits and transfer the batter into a pan.
  • Bake for 50-60 minutes until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then run a knife along the edges to remove it from the pan onto a wire rack. Brush with 2 teaspoons of melted butter and serve warm.
