Delicious Croatian apple pie squares with fragrant cooked apple-raisin filling and flaky crust.
Ingredients:
  • 2 1/2 cups all-purpose flour
  • 1 1/4 cup very cold unsalted butter, cut into cubes
  • 1/4 cup Demerara sugar
  • 2 egg yolks
  • 2 tablespoons sour cream
  • 1 tablespoons plum brandy
Instructions:
  • Combine flour and butter in a large bowl, then use your fingertips to rub the butter into the flour until mixture resembles coarse breadcrumbs without any large lumps of butter.
  • Combine Demerara sugar, egg yolks, sour cream, and brandy with flour mixture using a spatula until dough forms. Wrap dough in plastic wrap and refrigerate for at least 2 hours or overnight.
  • In a saucepan, combine apples, raisins, Demerara sugar, vanilla sugar, cinnamon, and lemon juice. Simmer over medium-low heat until apples are tender and mixture slightly thickens, about 10 minutes. Let it cool.
  • Preheat the oven to 400 degrees F (200 degrees C) and generously line a 9x16-inch baking pan with parchment paper.
  • Split the cold dough into two even portions. Roll out each portion on a lightly floured surface into 9x16-inch rectangles. Transfer one of the rectangles into the baking pan.
  • Bake in the oven until a golden crust forms, for about 10 to 15 minutes. Then, take it out of the oven.
  • Brush the partially baked crust with apricot jam, spread the filling evenly, then place the second dough rectangle on top and pierce it with a fork all over.
  • Bake for approximately 30 minutes or until the crust turns a beautiful light golden brown and the filling is hot and bubbling.
  • Place the pie on a wire rack to cool for about 10 minutes. Sprinkle confectioner's sugar over the warm pie, cut into squares, and enjoy warm or at room temperature.
