Delicious Croatian salad, perfect for lunch. Irresistibly tasty, best served fresh.
Ingredients:
  • 2 cups long grain white rice
  • 4 cups water
  • 1 head romaine lettuce, chopped
  • 1 large carrot, grated
  • 1 (7 ounce) can albacore tuna in water, drained and flaked
  • 3 tablespoons olive oil
  • 4 tablespoons balsamic vinegar
  • 0.25 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
Instructions:
  • In a saucepan, simmer rice and water until tender and water is absorbed, about 20 minutes. Cover and reduce heat after boiling.
  • Combine romainee lettuce, carrot, and tuna in a medium bowl. Drizzle with olive oil and vinegar, sprinkle salt and pepper, then toss. Allow cooked rice to cool for 5 minutes before adding to the salad. The warm rice will slightly wilt the romaine lettuce. Adjust vinegar, oil, salt, and pepper to taste. Serve promptly as the dish is best enjoyed fresh.
