Warm Italian Rice Salad with Sausage and Romaine

Italian sausage, mushrooms, seasoned rice, green peas, Romaine lettuce, tomatoes combine for a fresh, flavorful Italian-inspired dish.
Ingredients:
  • 1 teaspoon vegetable oil
  • 8 ounces ground mild Italian sausage
  • 5 large white button mushrooms, sliced
  • 0.5 teaspoon dried Italian seasoning
  • 1 (5.4 ounce) package Knorr® Rice Sides™ - Herb & Butter
  • 0.5 cup frozen peas, thawed
  • 1 head romaine lettuce, chopped
  • 5 ounces grape or cherry tomatoes, halved
  • 0.25 cup shredded Italian cheese blend
Instructions:
  • In a spacious skillet, warm oil over medium heat. Add sausage and cook, breaking it into small pieces, until fully cooked and no longer pink, for about 5 to 7 minutes. Using a slotted spoon, transfer the cooked sausage to a paper-towel-lined plate to drain excess oil, leaving about 1 tablespoon of fat in the skillet.
  • Cook mushrooms in a skillet over medium heat until tender, for about 2 to 3 minutes. Use a slotted spoon to transfer them from the pan to the plate with the sausage.
  • In a skillet, cook Knorr® Rice Sides™ - Herb & Butter according to package instructions, adding dried Italian seasoning to the water and skipping the extra margarine. Three minutes before the rice is ready, mix in the peas. Once the rice is cooked, blend in cooked sausage and mushrooms, and heat everything thoroughly before serving.
  • Combine crisp romaine lettuce and juicy tomatoes; gently mix. Transfer to serving bowls; sprinkle each portion with your preferred amount of shredded cheese and enjoy right away.
