Warm Bean and Spinach Salad

Vibrant Italian salad marrying lightness of salad with heartiness of a main.
Ingredients:
  • 1 package (10 ounces) washed fresh spinach
  • 1 can (15 oz) Progresso™ cannellini (white kidney) beans, drained, rinsed
  • 1 large red bell pepper, coarsely chopped (1 1/2 cups)
  • 2/3 cup Italian dressing
  • 1/4 teaspoon garlic pepper
  • 1/2 cup shredded mozzarella cheese (2 ounces)
Instructions:
  • Remove the tough stems from the spinach and tear the leaves into bite-size pieces. Place the spinach in a large bowl and add the beans. Set aside for later use.
  • Bring the bell pepper and dressing to a boil in a small saucepan. Reduce heat and let it simmer for 2 minutes, stirring occasionally. Add garlic pepper.
  • Drizzle colorful bell pepper mixture over fresh spinach and hearty beans, toss gently. Sprinkle with savory cheese on top. Enjoy served warm.
