Wholesome bean and spinach salad, ready in 15 minutes – a quick and tasty side dish!
Ingredients:
  • 1 package (10 ounces) washed fresh spinach
  • 1 can (15 to 16 ounces) cannellini beans, rinsed and drained
  • 1 large bell pepper, coarsely chopped (1 1/2 cups)
  • 2/3 cup fat-free Italian dressing
  • 1/4 teaspoon garlic pepper
  • 1 cup shredded mozzarella cheese (4 ounces)
Instructions:
  • Separate spinach leaves from large stems, tear into bite-size pieces, and place in a spacious bowl. Combine with beans and set aside.
  • Bring the bell pepper and dressing to a boil in a 1-quart saucepan. Reduce heat and simmer uncovered for 2 minutes, stirring occasionally. Mix in the garlic pepper.
  • Drizzle bell pepper mixture over spinach and beans, then toss together. Top with a sprinkle of cheese and serve while warm.
