Ingredients:
  • 1 brown onion, finely chopped
  • 2 zucchini, diced
  • 1 large carrot, peeled, diced
  • 400g can borlotti beans, drained, rinsed
  • 8 thin ham steaks
  • 150.00 gm pesto, to serve
Instructions:
  • In a large frying pan over medium heat, sauté onion, zucchini, and carrot in 1 tablespoon of oil until just tender, about 3 to 4 minutes. Mix in beans and cook for an additional 2 to 3 minutes until heated through. Transfer to a large bowl.
  • Season generously with salt and pepper, then delicately toss to mix.
  • In a non-stick frying pan over medium-high heat, heat 1 tablespoon of oil. Cook ham steaks in batches for 2 to 3 minutes per side until golden. Serve with bean salad, baby spinach, and pesto.
